Pushing the boundaries of gastronomy : How AI can generate a dialogue with chefs?

A Dialogue between Erica Kato Marcus and François Chartier, on how to push the boundaries of gastronomy with AI.

A deep dive in the development of Sony AI Recipe creation app idea based on François Chartier’s aromatic science of “Molecular Harmonies”, and on ingredient matching multiple possibilities linked to knowledge, cultural background and technology.
